The Perfect Camping Recipe for Cool Spring Evenings

The Best Reuben Sandwiches
makes four sandwiches

Ingredients:

  • 8 slices marble rye bread
  • 12 slices corned beef
  • 8 slices Swiss cheese
  • 8 oz sauerkraut
  • Thousand Island dressing
  • 4 Tbs butter, softened

You’ll also need:

  • 12” nonstick skillet
  • Parchment paper
  • Butter knife
  • Spatula

Let’s get going!

  • First, lay out a sheet of parchment paper. Butter one side of each slice of bread and lay butter side down.
  • Next, give a heavy drizzle of Thousand Island dressing to the unbuttered sides of the bread still facing up. Spread evenly.

  • On half of the slices of bread, arrange in this order: one slice of cheese, ¼ cup sauerkraut, three slices of corned beef, one slice of cheese. Top with remaining slice of bread, dressing-side-in and butter-side-out.

  • Now, it’s time for some patience. Place the sandwiches, two at a time, in a skillet over low-to-medium heat. Any hotter and it will scorch the bread without heating the sandwich all the way through.

  • Grilling on low heat allows the bread to crisp to a perfect golden-brown, the cheese to get melty, and the rest of the ingredients to warm perfectly.
